Quick Buttery Biscuits

Fluffy & delicious

This might be the weirdest biscuit recipe you’ll ever find, but you know what? It’s dang good. Don’t judge it til ya try it, okay?!

I love using this as a versatile biscuit recipe for both savory and sweet, breakfast and dessert and so on. It’s so yummy whether you’re smothering it in gravy or strawberries & cream!

Ingredients:

Homemade Bisquick (You can also just use 4 1/2 cups of Bisquick or All-Purpose Baking Mix):

  • 5 cups flour

  • 2 1/2 tbsp baking powder

  • 1 1/4 teaspoons salt

  • 5 tablespoons cold butter, sliced into small cubes

Biscuits:

  • 4 1/2 cups Boxed Bisquick or Homemade Bisquick

  • 1 cup sour cream

  • 1 cup lemon-lime pop

  • 1 stick butter

Equipment:

  • Mason jar lid or biscuit cutter of some sort

Instructions:

Step 01:

Preheat oven to 425 degrees F.

Step 02:

If you’re making your own Bisquick mix, combine all dry ingredients in a medium-sized bowl by whisking until they’re fully incorporated. Then, add your cold butter cubes to the dry mix and either cut in with a pastry cutter or mix it with your hands until the butter is well incorporated & the mixture is crumbly.

If you’re using Boxed Bisquick, simply add it to a medium-sized bowl.

Step 03:

Add the sour cream to the dry mix. Then add the lemon-lime soda. Mix it until it is well-combined and there’s no loose flour leftover.

Step 04:

At this point, I like to get my butter melting in the oven. Place your stick of butter in a 9x13 baking dish. Put the dish in the oven, and let the butter melt fully. SET A TIMER for a few minutes, so you don’t forget about it. You don’t want to burn the butter, just melt it! Once it’s melted, remove the baking dish from the oven.

Step 05:

Sprinkle some extra Bisquick or flour on your work surface. Dump out your biscuit dough and flatten it into a rough circle, about 1” tall. Take your biscuit cutter (or whatever you’re using!) and cut out the biscuits. The recipe should make 12 biscuits. You can smoosh the dough back into a ball and re-flatten it multiple times until you have 12 biscuits cut out.

Step 06:

Add your 12 biscuits carefully to the baking dish with the melted butter in it. You may have to squeeze them in there!

Step 07:

Bake for 10-12 minutes. I try to base them being done off of how golden they are on top! Sometimes it takes a little longer. With the camper oven, they never get very golden (sad), but they’re still just as delicious!

Step 08:

You can serve these hot right from the oven, or let them cool and reheat them in the microwave later if need be. Sometimes I even slap a few more pats of butter right on top after baking!

I prefer eating these with sausage & gravy (recipe coming soon), with my favorite strawberry sauce & homemade whipped cream, or with “fried” cinnamon apples. What’s your favorite way to eat biskies?
