Strawberry Sauce

For shortcakes, overnight oats, and more

Quite honestly, it makes my heart sad that when some people think of strawberry shortcake they think of the weird little packaged angel food cakes with the crater in the middle and a goopy red gel in a plastic bag from the store…like…no thank you. Homemade strawberry sauce takes basically no effort & comes together quickly.

And it tastes SO. MUCH. BETTER.

Like I said, I love to use this strawberry sauce for strawberry shortcakes, but you can add it to overnight oats, strain it and use it as a syrup for strawberry lemonade, and more. The only limit with such a simple fruit sauce is your own creativity! You can even use other in-season berries to make this, if you prefer!

Ingredients:

  • 1 pound of strawberries

  • Juice from 1 lemon

  • 1/3 to 1 cup sugar (to taste, I like mine sweet!)

Equipment:

  • Mason jar lid or biscuit cutter of some sort

Instructions:

Step 01:

Wash & slice your strawberries.

Step 02:

Add strawberries, sugar, and lemon juice to a medium-sized saucepan over medium heat. Bring it to a boil, stirring occasionally. There’s no need to mash up your strawbs - they’ll get juicy on their own!

Step 03:

Reduce the heat and simmer for about 20 minutes until it’s thickened a bit, stirring occasionally. Remove it from the heat & allow it to cool to room temp. It’ll thicken slightly more as it cools. Refrigerate and use as needed!

You can spoon this right over a hot buttery biscuit & top with homemade whipped cream, or let it cool and enjoy it later. Don’t forget to make yourself some overnight oats with a couple spoonfuls of this added, too!
